Partially it’s because some people are willfully ignorant or think it’s just a moody phase so since we’re closer together some signs just become more noticeable.
Partially it’s because the pandemic and especially the lockdowns put our brains into being more limbic which is when our limbic systems kick in to make us fight a threat, run away from a threat, freeze, or submit to it. As you can probably guess it is seriously unhealthy for our brains to be in this state for this long (unless you’re a literal psycho/sociopath since that’s the reason why they are the way they are, in a constant state of self preservation which is why you’ll never find one happy, just anxious or violent all the time), which takes pre existing conditions and exasperates them to high heaven.
For my own personal example, my ADD causes me to be very sensitive to sound, visuals, and taste: if someone got punched in the throat I find their voice unnaturally irritating, colours that don’t match or contrast enough can cause a mild headache, and most food just flat out tastes disgusting as if someone poured all spice on it. Because of the lockdowns exasperating it any altered voice sounds like nails on chalkboard, colours that don’t go together or are too close (like teal and chatruse) cause a mid range headache, and thankfully I managed to keep my taste in line, but there were sometimes when I didn’t, I started hating my favourite foods simply because I neglected to actively keep my sense of taste in line
